This is a favorite at our house during the cold months. I make it every few weeks and it feeds Jason and I for a few days. My friend Randy from Denton, TX gave this to me and I am so grateful! It is sooo good and very economical-- not to mention easy!
Taco Southwest Soup (It's like a Taco Chili)
1 lb ground meat
1 pkg taco seasoning
1 package buttermilk Ranch dressing
1 can whole kernal corn
1 can rotel
1 can diced tomatoes
2 cans pinto beans
Brown ground meat. Pour in all cans and packages and let simmer for 20 minutes. Serve with corn bread.
I've learned not to drain the fat from the meat- it adds flavor. We eat it with sour cream and cheese on top. Jason likes corn chips with it also.
It cost about $10 dollars to make (if you include the corn bread) and will feed a family at least once if not twice.
