This is a recipe that a family friend passed onto me. It is yummy. I made it for Bible Study last night (after doubling it) and it was a hit. The best part was that I had most of the ingredients on hand and only bought a lemon, an onion, chicken broth, coconut, bananas, and chicken.
Chicken Curry
Rice (I like jasmine rice but any rice will do.)
¼ cup + 2 Tbls butter
½ cup onion, chopped
1 Tbls curry powder
¼ cup + 2 Tbls flour
1 ½ tsp salt
1 ½ tsp sugar
¼ tsp ground ginger (Sometimes I use minced fresh gingerroot as well.)
2 cups chicken broth
2 cups milk
4 cups cooked chicken
1 tsp lemon juice
Melt butter over low heat in a heavy pan. Saute onion and curry in butter. Blend in flour and seasonings. Cook over low heat until smooth and bubbly. Remove from heat.
About this time make your rice.
Stir in chicken broth, and milk. (I like to heat those in a microwave first in order to save time.) Bring to a boil, stirring constantly. Boil 1 minute. Add chicken and lemon juice.
Serve chicken mixture over rice. Top with condiments.

Hard-boiled eggs, chopped
Bananas
Coconut
Bacon bits
Pickles
Onion rings, sautéed
Raisins (I like golden raisins. Sometimes I soak them in some of the pineapple juice, then drain.)
Chutney
